Congrats on your pending nuptial! Here's a riff on a White Russian with inspiration from The Aviary. It's a cocktail your guests will probably have never had before. Mix up a small batch to make sure you like it. =)

1.5 oz cold brew coffee concentrate*
1 oz Rum (Appleton's Signature Blend, Coruba Dark, Chairman's Reserve Spiced, Cruzan 9 Spiced. Not too vanilla forward.)
.25 oz Galliano L’Autentico
.25 oz Chickory syrup**

1 oz Shaken heavy cream

A day or two before, batch the first 4 ingredients in sufficient quantities for your guests and chill.

Pour 3 oz of batch over a couple of rocks in an old fashioned glass.

Shake cold heavy cream in a cocktail shaker until thickened but still flowing (A drop on your finger will bead up.)

Float 1 oz of cream on top of cocktail.

No garnish necessary.


*Cold Brew Coffee Concentrate (1:4 coffee to water)
-Doesn't need to be fancy or expensive. Let's make this easy. Scale as required. Use a new-clean 5 gal bucket from Home Depot or Lowes if need be.

1 10.5 ounce can of bold/dark coffee (Chock Full Of Nuts New York Roast is fine and goes on sale for $2)
1.2 liter (1200 ml; 40 oz) filtered tap water (or bottled spring water), room temp

Combine in large container, stir well and cover. Let steep 24 hours at room temperature.
Place a kitchen sieve over a large container. Line with large coffee filter.
Give coffee solution one last good stir and filter through sieve. (Be patient.)
Will keep well refrigerated for a week.


**Chicory Syrup
-Scale as necessary

.25 cup roasted, ground chicory (like this or this)
1 cup water
1 cup Demerara sugar (table sugar works ok)

Place water into pan and bring to a boil. Remove from heat. Stir in sugar until dissolved. Add chicory and return to heat. Simmer for 5 minutes. Pour through fine mesh strainer (tea strainer) into mason jar. Will keep refrigerated for a week.
