Stone Age is my favorite board game. It's easy enough that no one will have a lot of trouble with it on their first play, plays 2-4 players well, and is a great introduction to strategy board games. There are also no feelings hurt (as could be by games like Risk).

I also recommend you check out www.boardgamegeek.com for other suggestions. Their Top Games list is generally pretty solid, though not all of those games are friendly to new gamers.
