I used to have a concession business.

From what you described you don't need a truck yet. If I were you I would buy a good-quality 10'x10' pop-up tent, get a really nice, large, clear sign (maybe 2' high by 10' wide), poles to mount it on, and 3 good quality plastic tables with nice skirts to use as counters (try to get tables that are fairly tall).

Then, I would make inexpensive snacks that you can dress up on-site. Like say you wanted to bake cookies, you could use them to make "cookie sundaes" or something onsite. People at special events want interesting junk food that makes them impulsively buy it ("hey, you can't get that every day! let's grab one!") so if you take a normal product and add some unusual flair to it, it sells way better. Same with drinks, make lemonade with soda water and it's "sparkling lemonade".

The main thing is, do a couple events that look like they have good attendance and don't charge too much to get into, because you need to get a feel for how other vendors operate and which events and items make sense for you. Consider the first 10 events as "research" before you drop any serious money into your setup.

I would actually suggest this book because it covers a lot of the basics really well.
