A lot has already been said but so far I haven't seen anyone mention having a juice groove. My favorite cutting boards have juice grooves just in case things get messy. Here is a link to a cutting board that has a juice groove. I don't own this cutting board so I can't really speak to its qualities but I will praise its juice groove that goes along the outside perimeter. Sometimes I am slicing some really juicy roast beef or possibly some really juicy tomatoes. I don't have to worry about juices running onto the counter or onto me because they get trapped by that juice groove. Yes you can put down a towel to trap the moisture that runs off but that's just one extra thing to clean and this simplifies everything.
