You always want to separate the tiers and cut them individually. When a cake is stacked properly (each tier on its own piece of cardboard supported by dowels), it's pretty easy to do. A cake lifter can make this easier and less messy. One big advantage to separating the tiers (as opposed to working from the top down) is that you can make each tier a different type of cake. For instance, the bottom could be chocolate, while the top could be yellow cake. This is great for crowds since not everyone likes the same flavors.

My current job is Stay at Home Mom, and my kid's second birthday is coming up. That means one of my biggest jobs - designing and making his birthday cake! This cake lifter would really help me make a cake that looks as good as it tastes. (I always have trouble getting cake onto a serving plate to decorate.) This year's theme is Jurassic Park, so I'm making a dinosaur cake. :)
