1.) I dunno, I just trust the color after it sits a few minutes.
2.) I think you'll be fine doing it the day of.
3.) I would suggest getting a timer to control your light. I use a simple one similar to this one available at Amazon. If you have plants in your tank you need to consider how much light they need, if it is fish only then I believe you have a lot more leeway with your lighting period.
4.) Here is an article about acclimating shipped fish, the info applies to fish from the local store as well. For me, the short answer is "it depends on the fish." Some are more fragile than others.
5.) I've been using this stuff for a while and the fish like it, it also seems to help keep the water cleaner than normal flakes. Smaller fish might have trouble biting it, my harlequin rasboras have to gnaw on it for a while to get it to break up. Also consider some of the frozen cube food once in a while. Fish go nuts for it and it adds nutrition and color.
I put off getting a timer for a long time because I assumed they were expensive and hard to use, but I was wrong on both accounts.
