I actually use this as a strategy during therapy sessions for children with low muscle tone. This is very normal. When children don't have to think about their bodies they are better able to focus on the activity in front of them.

For example, if you have ever seen a child sit in a W-sit this is because that position essentially locks a child into place and they don't have to use their core muscles to hold themselves up (for the record try to not let your child sit this way, it's terrible for them). Children in a w-sit are better able to attend to their toys because they aren't working as hard to physically hold themselves up. The same goes for your child in a high chair: they are in a fully supported position. Also, as you mentioned, you have created a physical structure/enclosure for the child, which helps with attention and focus.

If you decide to transition to a toddler table, you can always try a cube chair which has the same type of effect as a high chair: excellent support and provides a little bit of an enclosure on each side. They're really great for early childhood seating, and also are at a lower risk for tipping, unlike a 4-legged chair.

Speaking of furniture, I just found out that RLM is not using an official [star wars chair] (https://www.amazon.com/Disney-Star-Wars-Swivel-Chair/dp/B017EPF08K/ref=sr_1_9?ie=UTF8&qid=1517537019&sr=8-9&keywords=star+wars+chair) for everyone to sit on in nerd crew. Hopefully they'll use it the next episode.
