I've been using chili and white chili kits from the grocery store, a pound of beans, a bit of chicken for meat, diced tomato, onion, peppers, and any other vegies I want to use up.
Have you ever tried eggplant powder? This was a treatment we used when I was a kid. I've never heard of anyone else that's ever even tried it, but my friends that tried it still talk about it like it was magic. It was a dark powder that you just dab a wet finger in the powder and then dab it onto the canker sore. It stings for the first bit, but it takes care of the canker sore in no time. I stopped getting them altogether, so I don't even know where you'd source that kind of powder. I tried to look it up on amazon to see if there was any user reviews for the use of canker sores, but couldn't even find any kind of similar product.

Edit 2: Might've been this stuff. The salt would explain the stinging. "EDEN Dentie Toothpowder is made in Japan from only the calyx (stem) of Japanese eggplant and sea salt. The eggplant is first cleaned, the calyx and a bit of the vegetable is sliced away, then pickled with sea salt for a few weeks. When finished pickling, the eggplant is dry roasted until it is like charcoal. The charred eggplant is then ground to a fine powder, allowed to cool and packed."
Maybe don't shop exclusively at Whole Foods if you're concerned about price? Hell, you can live off of healthy food mostly from Amazon. Start with rice: $24 for 25 days worth of food @ 1600 kCal a day. Add in dried beans - high fiber and quite tasty, for about $2 per pound.. Add frozen vegetables from your local store - and in NYC, that's not difficult at all, thanks to awesome public transportation - and you're eating healthy on way less than $40 per week.

Yes, you should be using the normal red bean, which are smaller than kidneys. About the size of a pinto or black bean. The skin on Kidney beans are super thick, which make them unappetizing in large quantities.

You could also get something like bulk soy curls, also dehydrated, very lightweight and very good. Just add to hot water and season, they are good in just about anything. I bet if you were interested in trying you could make a good jerky at home with them to bring, it would be cheaper than a ton of packaged Primal Jerkys. The recipe is super ambiguous isn't it? I live near a few Asian grocery stores so I just wandered through them until I found something that seemed like it would work.
The beans I got were labelled (by the store) "Preserved sweet red beans", the packaging was Chinese and had some dessert pictures on it. They we pre-cooked, sweetened (ingredients were beans, sugar and water) and came in a vacuum sealed bag, I didn't need to soak them. This recipe looks like it might do for making them. I've had a look and I can't find the actual one I bought, but I think this seems to be the same sort of thing in a can. Either way drain before using.
Super simple~
First start with these.
On the can there is actually a recipe for the rice seasoning and instructions. It's basically rice vinegar and sugar. Aside from that, steam your rice and then add the seasoning, stuff the inari and you're done! Also, the recipe calls for 2 1/2 cups of rice. I actually used more like 2 cups but it really doesn't hurt to have some extra rice.
Buy an instapot pressure cooker and get some dried beans of all varieties. Pair the beans with rice and you have a complete protein! I am in romantic love with my pressure cooker. I'd recommend making chili in it right off the bat. (You'll need diced tomatoes, beans, onion, chipotle peppers and chili or taco seasoning. Split pea soup is also stupid easy and very affordable.
You can also get a seed sprouter and the seeds for it for some produce in your diet. I also like sprouting mungbeans. And it's getting a little late in the season to plant I think but consider starting a tomato plant.

This is by all means not a super healthy option or one that you should have all the time, but Vigo Red Beans and Rice are vegan and have a smoky, "meaty" like flavor. We do them a few times a month, especially in the winter, and even my non-veg husband gets cravings for them. We started ordering them on Amazon.

If you have a slow cooker (garage sale/goodwill) beans become really easy and you can store them in the fridge for a week and heat them in the microwave. The bean broth can be used to cook rice or to make soups.

I'm a huge fan of dehydrated refried beans Fantastic Foods sells them in bulk and they are pretty good butthey are already seasoned. My favorite are the ones from The Santa Fe Bean Company. Sometimes they ahve them in bulk.
