This week has been completely out of routine doing storm cleanup. Yesterday was starting to get back to normal, but yall physical labor is exhausting. Everything hurts down to my fingernails. I made chili and it was delicious. Cobbled together what I had and three or four different recipes to make it mine. Even had an epiphany that I didn't need to go to the store for a freaking can of tomatoes...I had tomatoes on hand and could make my own fresh in the food processor. How you like me now, <insert TV chef name here >.

But the highlight was the corn bread . It came out like corn bread pound cake almost - in a great way. It smelled so damn good in the oven and the taste was the stuff bakery dreams are made of. I couldn't find my 9" cast iron so loaded up my 6". Had to throw some foil on top so it didn't over brown but it just turned out crispy on the edges so yay. The key was the corn flavored extract. This stuff isn't cheap but it really gives it that authentic smell and flavor. I can't wait to try Christmas tamales now. I used this recipe. Added 3/4c shredded cheese just because and I meant to add a jalapeño but put them all in the chili instead. Oops. I used this corn extract. Yes, pricey but at 6 drops a use it is basically a lifetime supply. :D

Hello Beautiful Bombshells!

The pretzels and goldfish were a big hit with the kids and the parents last night! The goldfish were the stars, so I may just get goldfish next year. I've got the leftover bags bagged up for hubby to take to work this morning.

I did IF yesterday and had a Greek Salad topped with Mackerel for lunch around 2 pm. I love mackerel sooooooooo much! I also found some Tazo Pumpkin Spice Chai at Target a couple of days ago and it is soooooooooo tasty! I bought two boxes of it and I may have to go back for more before they get rid of the flavor.

Dinner last night was Keto Low Carb Chili (I did it in the Instant Pot) and Easy Keto Cornbread (Cast Iron Skillet). Hubby was incredibly pleased with the taste of both; however we both agreed that the cornbread could've used a little more flavoring. The recipe said 6 drops (I bought the Amoretti) and I remember others saying it wasn't enough, so I kept tasting and adding to the batter. Maybe because it was a sweet corn flavor? I mean, it was delicious, don't get me wrong. It just didn't have the consistency (graininess?) of real cornbread made from corn meal...and now that I think of it, that was what was off. For the chili, I made it to the recipe except I added two cans of drained and rinsed black soybeans and smoked paprika.

Might want to try cauliflower with corn extract, http://www.amazon.com/Amoretti-Sweet-Corn-Extract-Ounce/dp/B00KS3LH9M, I made fauxlenta, just made that word up now, with a mashed cauliflower like mashed potatos then loaded with cheese and some corn extract and it came out pretty good.
