A favourite in my family is a taco casserole: Mexican seasoned chicken thighs/ground beef layered in a dish with grilled peppers and onions, salsa verde and then baked with some cheese on top. When it's out the oven you can add whatever toppings you want - lettuce, sour cream, guacamole, hot sauce, etc.
Another good one is a chicken alfredo casserole - broccoli, cauliflower, brussels sprouts and chicken thighs all in a dish with some alfredo sauce (I usually make my own with cheese, HWC, etc.) and then baked, topped with a bit of parmesan until it gets bubbly.
Green bean and mushroom casserole - kind of a take on the traditional green bean casserole just without the tin of mushroom soup and the fried onions. I throw together big portobello mushrooms, green beans, and then usually make my own mushroom sauce using HWC, butter and smaller mushrooms like button or straw. Mix everything together and top with some parmesan when it comes out.
