no no. You could ruin the heat treating or mess up the edge. I would get a cheap wet stone personally:

Even sand paper is super aggressive, I'll use that if the edge has been damaged.
A leather strop and some polishing compound really finishes the job. This combo works great on chisels too

Also I have a very cheep strop that I've been using after each use but I just got a better one in the mail today
Having just gone through a week long intensive, including a full day on sharpening / prepping planes and chisels using water stones, I'd recommend:
Sounds like you already have plate glass for flattening the stones, so you should be all good there.
So last night I decided to give this another go after watching a couple more videos, this one in particular. Since my knife was recently sharpened professionally by Mike, maybe 6-8 weeks ago, I figured I didn't need to use the 800 grit side as that's quite rough and may end up actually dulling the knife, so I strictly used the 1000 grit side and followed the technique in the linked video. Held it about a 15 degree angle and slid back and forth going up and down the blade for 10 minutes, then flipped and did another 10 minutes. Now the video said to repeat this process two more times but I didn't have that kind of time as I had some cooking to do. Washed and honed the knife and noticed a difference in sharpness as soon as I started using it. I may very well do this a couple more times tonight. Just wanted to say thanks for inspiring me to try again and I think I may purchase a finer whetstone like this one. May be overkill for my Mercer knife but it's cheap enough to give it a shot. Thanks again!
