In general it is not easy to find a good quality skeleton that is worth owning in this price range, but the above are a few exceptions. Lastly, not a skeleton, but one of my favorite budget watches that looks much more expensive and has an impressive watchmaking pedigree behind it: the Orient Sun and Moon. You can find it for just a bit more than $200, and with a sapphire crystal version you are getting amazing bang for your buck.

Overall: Stay away from the budget brands like sturhling and the $70 giant open face watches. Most are actually extremely overpriced for what you are getting and will crap out on you in a year. I'd recommend looking into "open heart" watches if you like seeing the mechanical aspect. Almost anything by Seiko and Orient are your best best in this price range-they make their own movements (which in the watch industry usually only happens in >$2,000, they have great finishing and details and they are extremely well made overall. Both have been making watches for decades.
A list of brands that are well respected in the industry between $200-$2,000:
Hamilton
Seiko
Orient
Tissot
Rado
Alpina
Certina
Casio
Citizen
Glycine
Sinn
Stowa
Junghans
Oris
Zeppelin
Nomos
I'm missing a bunch of other ones as there are way too many, and once you reach the 3k area it's a whole nother world.
You're not gonna find a skeletonized watch at that price range from any of the brands that /r/watches usually points people towards, so here are some options you might like from watches that are outside our normal recommended brands but okay for normal people:
1 2 3 4 5 6 7
All of these are 42 to 44 mm wide which most people consider to be modern large sizes without being so big as to look silly. Cheers,
