How are you controlling your fans?

This is what I am using:

Yes, I'm using the card header, ordered an adapter on amazon, something like that :

The good side is that you can manage the fans and set a curve directly from Afterburner.

The downside is that the graphic card hitself cannot manage the fans without a custom curve because the firmware of the card is adjusting the fan speed with the RPM of the fans and they are much slower that the original ones.

Without a custom curve, the fans are at 100% when the card thinks they are at 47% (approximately).

Yes it should fit, I have one on my 2080 Super. If all 2xxx series cards have the same standoff screws, then you would use the AMD Curacao holes. It looks like the Gigabyte PCB has standard GPU fan connectors, so all you would need is this to control the fans via Afterburner: https://www.amazon.com/CRJ-Splitter-Adapter-Sleeved-Graphics/dp/B07T95C68T/ref=sr_1_3?crid=2YL3CFPW8JIDS&keywords=gpu+fan+adapter&qid=1567998284&s=gateway&sprefix=GPU+fan+%2Caps%2C184&sr=8-3

Based on your post, it sounds like you bought the wrong type of splitter.

You want one for the type of header that GPUs use for their fans. Not the type that motherboards use.

I know, I used an adapter like this to connect the fans, it works without an issue for me. To control my GPU's fan speed on Linux I used this script, maybe that helps you.
