No pre-sear, just put it in the bag exactly how it is except with a little dry thyme. After 48 hours, I dried it with paper towels, added sea salt and pepper, and then seared it about a minute a side on high with the electric fondue maker.

Here's the link to the Fondue Maker. I got it as a gift and couldn't find a good use for it until now! It's basically a non stick electric skillet with very easy cleanup and it gets very hot very fast. http://www.amazon.com/Cuisinart-CFO-3SS-Electric-Fondue-Maker/dp/B00018RR48

I'm really liking the suggestions so far everyone!!!

Not quite sure what to get just yet.

I like Connors, Scene, and Cantina Laredo. Melting Pot is good for a date, but I bought my own Fondue Pot and I've found way more creative recipes to try at home.

I miss Sakoa, though. That was hands down my favorite lunch spot.
