I just put this on my wishlist and I looked up ways to use truffle salt. I read some people like it on their fries, eggs and popcorn. What do you typically put your truffle salt on?

Here's what I've discovered over the years (get ready because many consider this blasphemous): Marination is a waste of time.

It doesn't really penetrate anything, and all the spices could just as well be added later in the process. This will save you lots of time and dishes to wash.

My favorite pork should recipe is VERY simple:

  1. Get pork shoulder
  2. Warm up cooking device
  3. Slice up the skin side of the shoulder to create a checkered pattern (to allow fat to melt out)
  4. Place pork shoulder into cooking device (yes, no spices! don't be scared, we'll add them later sometime when it's easier)
  5. Leave pork for a few hours until connective tissues melt (you can tell by playing around with the bone; when you can twist and pull it out, it's ready)
  6. Take out pork.
  7. Shred it lightly and mix it with: truffle salt ( something like this, but try to find another brand with 10% truffle ), pepper, lots of cilantro (unless you're one of those who doesn't like that), lot's of fresh garlic.

    Eat and serve with your favorite hot sauce or steak sauce for dipping.
