I don't have any pics of it set up and I'm away from my console for the week but this is the monitor I use. I just bought a cord that splits one outlet into 3 so that I can power the console and the monitor from the single power outlet on the plane.
Yes! Portable monitors are a thing. They need an HDMI in, though. Regular portable monitors that only use USB won't work.I think the suggestions below are exactly what you're looking for.

I want one of these bad boys myself. I'd get one if the exchange rate to Aus wasn't so bad atm. Also saving for a laptop so can't get one just yet, but hope to in the future. Lots of reviews of them on Youtube and the responses are generally very positive.

I've been planning a mini-ITX SFF 1060, 6500 build for quite some time, but I haven't pulled the trigger due to lack of a good display setup. Does a portable monitor have to be connected to the graphics card to utilize it? Most portable monitors I've seen only connect with USB 2, 3, or C. Something like this or like this. There's plenty of portable monitors that are much cheaper than buying an entire iPad simply for the purpose of having a second screen.

Possible? Sure, you can run headless with Virtual Desktop set to auto-start. Desirable? Not entirely sure. I have a mini-itx build, and it's compact enough to take around, but I'm not sure I'd want to lug all that, unless I was definitely going to be in one place for a long time. The only other issue I can see happening is if something goes wrong with the Oculus runtime, or Virtual Desktop, and you're left without a monitor to fix it. This is probably a stupid idea, but you could get a micro-monitor and either affix it to the case, or build it into the case if you're handy with a dremel.
Edit: Kind of expensive, but I found this portable monitor. It has displayport and VGA connectors in addition to HDMI, so you don't have to take up your HDMI port if you only have one. Hell, now I might have to do this...
Edit: Bingo, touchscreen version. This is looking more appealing all the time.

So it seems like people aren't the biggest fans of the poor viewing angles that come with the TN panels. GAEMS doesn't sell any higher end models with IPS panels. Doing a little investigation on my own part the only portable IPS panel I found was the GeChic 1303H. Decently reviewed and a lot "lighter" solution than the GAEMS case or monitors. Plus it doubles as an actual second monitor for laptops.
