My fave gf cake recipe is this one and I follow the advice to soak the flours in most of the liquid for at least 20 minutes before mixing everything else. If you do it with a very fine blend like Mama's and real mayonnaise (just another way of getting oil, acid and egg in there) you get very refined cake or cupcakes. There are directions for making it with cocoa in the comments too. Not as fast as a microwave recipe but great when you have the time. For this microwave version I'd probably use a blend of almond, sorghum and arrowroot. :::off to try it:::
