Solar should work fine, but keep in mind that solar chargers are very inconsistent and the rating shown is in optimal conditions, the real world output is far less than that.
That said, the goalzero Nomad 20 should do nicely, my Nomad 7 didn't charge the battery to any useful amount.

My parents have a couple water filter pumps and a month's worth of food in the form of Mountain House and MREs. My dad also grows a bit of small garden for some fresh veggies. Plenty of camping gear, a bunch of propane for lamps and propane stove. A few guns a bow as well.
I'd say that's plenty of stuff, but I'd probably get rechargeable AA/AAA batteries, a charger for them and some good flashlights as well as a battery powered radio. They have things like this which you can use with one of these to keep all your electronics charged if you don't have access to electricity.
That's all I can think of off-hand.

You would need the car charger for the SP2, but this one should do the trick. It is in my wish list as I don't really need it, but it would be nice to have.
