All of this should already be done to a greater degree. Any emergency can have you out of house for who knows how long. Let's say weather related and even long-term SHTF like Katrina.
The CDC has info on a general checklist for everyone. It is the basic requirement.
Water, food, clothing, shelter, protection, and First Aid.
Foods that require little or no heating. A water bladder like a Camelback and some jugs of water. Ways to build a fire and a light source. Durable clothing for the weather. Wet weather, hot weather, and cold weather gear when applicable.
A couple of 10' x 10' tarpts with metal holes and at least 300ft of 550 cord.
Protection: Self-defence, mace, or a weapon as long as you know how to use it.
Don't buy a pre-made First Aid kit. When life is in danger cheap and sub-par items will not help much.
As for the vehicle, it should not get below 1/4th tank. Might even want to have a 5gal jug with spill-proof cap and stablizier in it while also using it and getting fresh gas. A first aid kit in the car. Bottled water doesn't do too well in HW or CW in a vehicle.

Paper documents take up more space.

I have this. It's one of the best, highest rated USB sticks and can take a lot of abuse and still keep your data safe. Get the 64GB version 2 pack. You want a backup of your stuff. Scan all your important documents and organize them all and put it on this. Don't forget to encrypt it and make sure the password is something unique and easy to remember.
You can carry copies of the more important stuff like birth certificates, IDs, SS cards, car title, insurance, mortgage, etc. A Go Bag is what a lot of this will fit in.
Buy/get the stuff first, calculate the space needed, and then get your bag. The MOLLE system is my preferred kind as you can add MOLLE pouches and bags to the outside increasing your space.
If you have pets, same goes for them. Info on them on the drive. A backpack for their stuff. It all needs to be accessible yet not out in the open. An emergency requiring this action will be uncomfortable so one would need to practice this a few times a month with everyone involved.

On a PC?
For future reference: Rule of 3 regarding data.

  1. 1st backup. On a Passport or similar 2.5" drive. Label it. Think of it as a working HD for your data. Connected to your PC only when working with applicable data. When not, turn it off or disconnect. If needed, this one can go with you but should be password protected.
  2. 2nd backup. Same copy on another 2.5" drive. Updated any time your first is updated. Why? What happens when your 1st one gets f'd up? This one is in your room, maybe in an antistatic bag with its cords. Doesn't leave your home.
    If the 1st one fails and you lose it, this becomes your 1st and you buy another one to replace the 2nd.
  3. Final original: This one is preferably kept off-site. Bank lockbox for example. Should your home get destroyed and you lose your PC and one or both backups you have a 3rd that is safe elsewhere. Should be backed up at least 2x a month.
    If you must move a file onto your PC that's fine, but when done, save and move it back onto your 1st backup. If applicable rename it with a date so you have various copies of a file for whatever reasons.
