Sure, so yeah, mostly just take your time. Zip ties are the ideal for stuff you're sure won't be moving (use wirecutters to chop off the extra length after securing it) but the velcro straps that come with e.g. a PSU are better for most other things.

I've been thinking about this recently too.
If you specifically need a tray so you can bunch up your cables and just chuck them in then you might want something like this that you can just stick to the desk.
I you just want something that keeps the cables right up against the desk an hides them then d-line tubing would be a good idea since it's adhesive-backed. Comes in different sizes/colours and usually sold in metre long runs.
