Shoes--those Teva/Chaco/etc hiking sandals will probably be fine since Cambodia is pretty hot and humid; especially if you're going to jungles or beaches, you probably want footwear that is relatively waterproof and easy to clean (as opposed to full-on trekking shoes). You can get some less utilitarian-looking sandals that are more versatile but still comfy for long walks. E.g. these or these

Luggage--it can be a bit of a pain carrying wheeled luggage around, depending on your location. Maybe opt for a duffel bag/backpack with wheels like this orthis or this so you have different carrying options? Even if you dislike backpacks, I'd go for something with at least shoulder straps.

As for tech, I basically just bring a folding keyboard in case I want to do some lengthy typing--and maybe my 10" Windows tablet if I actually need to do some work. I wouldn't weigh yourself down with a laptop or risk it getting stolen in a hostel.

Clothes--I'm a big fan of wrap skirts (e.g. this, this because they're so easy to put on and take off, and don't look too . They made for very versatile outfits wearing swimsuits underneath (e.g. trekking in the jungle where you're bound to cross a handful of rivers, I just put my wrap skirt and shirt in my dry bag and crossed in my swimsuit). When I'm traveling, comfort and versatility are key for me; I bring a nice sundress or two, but otherwise I'm in a tank/casual button up and sports bra, and a wrap skirt or shorts. Keep in mind that you do have to dress modestly when visiting temples--normal clothes are fine, it's just that you can't walk in with just a bathing suit and short shorts.

As for roughing it--hostels in SEA are pretty decent--I've definitely stayed in some that felt like nice hotels. Honestly the main thing is just wearing comfy shoes and clothes appropriate for the humid weather.
