Once you learn how everything works, it's actually quite simple to set up; more so than a RAMPS with Marlin/Repetier-firmware.
In a nutshell, it has a default.cfg that defines pinouts (stuff specific to the board, don't futz with it), a bunch of premade profiles for sorts of kinematics/printers like a Kossel Mini, Rostock MAX V2, a generic CoreXY called maxcorexy, etc, etc.) which specifies general things.
Then you have your local.cfg, which you write using chunks of text from the wiki. Anything in local.cfg will override the profile.cfg text; so if you specify max homing directions, as you would for VORON, you simply specify this in your local.cfg.
The touchscreen can be replaced with any generic 800x480 touchscreen; just repeat the local.cfg changes for Toggle- the software that runs the touchscreen- to adjust scaling and screen rotation. From there, it's mostly all universal. I personally got this screen, which works well enough though I haven't designed a mount yet.
I've had a hell of a time, but that's mostly my own incompetence and bumbling my way through without many of the right connectors.
I can't help but think a Z-max endstop would be nice too, and would be easy enough to integrate.

I believe this was the touchscreen that I used. The interface of mopidy is chosen by the user. There are a lot of extensions for it since its open source. So really you just find one you like and and can change it really easily. I really like it personally.
I used the one linked below, but I didnt hook up the touch options since no gui.. you can probably find a cheaper option but this worked great.
