Looks like the Moshi one on Apple's site (also on Amazon) is one of the only ones that hits the full 5k 60 Hz specs. I just ordered it. Will update on Thursday.

UPDATE:

On a 2018 15" Macbook Pro w/ 560X the Moshi USB-C to Displayport (5K) cable linked above only works for 2560x1080 (everything is too big), and the full 5120x2160 resolution locked at 30 Hz, (everything too small.) Here are the options you're presented with that cable. https://imgur.com/JEXXwmm All of the other options between the two mentioned above are either grainy or stretched or with black bars on the left and right!

I prefer the scaled Ultrawide screen sizes presented using the TB3 to TB3 cable, either the 3360x1417 or the 3840x1620. So...

Finally found it: here is one of the few bi-directional DP to USB-C cables/adapters I was able to find. They're not common, since almost everyone who needs a USB-C to DP cable only needs to plug a laptop with a USB-C output into a monitor with a DP input.

There are some mentions of (bidirectional) DP ~ USB-C cables, not as easy to find however.

So you can do USB-C to display port monitor, and display port to USB-C monitor. It's expensive, and you'll likely need to get a USB-C female to female adaptor and a DP to mini-DP and I can't gaurantee anything will work with your setup at school.

Your biggest issue is your UltraFine, as it's USB C only. The only cards that have USB C output (not TB3) are the RTX cards, which Apple currently refuses to support (blocked the drivers).

The simplest way to game in macOS will be to buy the Blackmagic eGPU but the 580 is reaching the end of its lifespan.

Another option, which I am not sure if it'll work is a most people are doing it the other way round to you is buying this cable to connect your UltraFine to a normal GPU https://www.amazon.co.uk/Moshi-USB-C-DisplayPort-Cable-1-5m/dp/B077S9DZGK

What I would go for in your situation is gaming in Windows (which I do with the same laptop) as you will be able to buy an RTX card which has USB C output and also handles excelerating games on displays not attached to Gpu's far better than macOS (I have the 5K model and that's how I use it - terrible performance in macOS but fine in W10).

Now after writing all that I've noticed you are talking about the new 4K which I'm not sure if they are USB C like the older smaller ones or TB3 like the 5K, if the later then its Blackmagic only.
