Oh, I thought I'd mention that I frequently preroll initiative for the baddies and write it on the encounter sheet so during the game I only have to fill in PC initiative. If these are battles that are kind of epic and I want to remember, I fill in all the info for every box on the sheet, then save the sheet, sometimes writing up a summary of the battle on the back. Otherwise I just fill in bare minimum of what will be needed during the session. Or if these are a type of baddies we will be fighting a lot, then after the battle I erase the initiative rolls and whatever else may change for next time but most stuff stays the same so I can reuse the paper (see erasable pens below) next time.
I use erasable pens so the numbers/text are easy to see but I can alter stuff I messed up on or need to change for whatever reason. I use Frixion. They come in several colors, write very well, and erase well too.
