Hey, I use a very similar setup (but with an old school SNES, not a SNES mini) and I can help you.

First thing, I'd recommend just getting an HD capture card, as the setup is easier and less cluttered, and since you're using an hdmi-out console, the picture will look much cleaner that way.

however, if you insist on using an SD capture card, read below.

Actually, the GV-USB2 is female RCA to USB. It plugs into a USB port on your laptop. NOT HDMI. That being said, look below for the setup.

The topology of this setup will look like:

SNES classic mini --> hdmi cord -> hdmi to rci converter -> splitters, one in each hole (red, yellow, white) -> double ended male rca cables (one set of cords into your TV/ one set of cords into GV-USB2) -> GV-USB2 into usb port on laptop.

When you split the signal at the RCA level, instead of 3 holes, you will have six, which allows the signal to be split between your television and your laptop, letting you capture the game directly on your streaming software while ALSO being able to play it on a TV!

You might ask: why would you wanna split the signal? The reason is, you will wanna play with as little input lag as possible. Playing the game from the laptop screen capture (using amarec) isn't the most desirable thing, it's much better to play it on a real television, preferably a CRT, but an older LCD with RCA capabilities will also do the trick just fine for this.
