This thing is probably the simplest solution: https://www.amazon.com/PetSafety-Temperature-Environment-Motorhome/dp/B07DR6RBVVbut not exactly the cheapest.

On the other end of the spectrum... I already had a wifi router hard-wired in, so I set up a Raspberry Pi Zero W with a DS18B20 temperature sensor. Probably the cheapest option, but not particularly straightforward to set up.
