I have something similar (but I don't have a latex mattress, yet). So, here's my 2-cents, for what it's worth.

It's a similar product, but not organic (and thus, much cheaper). I think that mine might have a little less fill as well, judging by the weights.
1 - I have a memory foam topper, and was hoping this would help with the heat retention, but it doesn't seem to. My bed still gets too warm for me, and the protector holds heat just fine (if I get up in the middle of the night, then come back to bed... the top of the mattress is often still warm where I was sleeping). This might not be a concern for you.
2 - When washing, I worry a little bit about whether or not the cotton stuffing is drying enough. Sometimes, when I put it back on the bed, it seems like there are dark spots inside (where I can't get to them to check them out) - and I wonder/worry that it might be mold. I don't think it is, but when I upgrade my mattress, I'll be changing out the mattress protector as well.
3 - Mine is not stretchy. From what I've read, something with some stretch is better over latex. I'm assuming that this one is also not stretchy - so you might, possibly, lose a little bit of the latex feeling. For example, where the latex itself might be a bit more flexible, this could stop you from sinking in as much as you would otherwise. To be fair, I don't know how much this matters. If you're using non-stretchy sheets, I'd imagine they'd do the same thing, so the mattress cover may be immaterial at that point.
I've actually bought my replacement mattress cover and have it ready (for that fortuitous day where I finally make a decision and get my new mattress, whenever that might be ;) ) - it's this one from Cozy Pure:

It's actually cheaper (at least right now, I'm not sure if that sale is ongoing?) and also organic. It's a thick, stretchy cotton... sort of like sweatshirt material, with no stuffing. I'm sure there must be others out there that are similar.
