If you're going home every weekend by car, there's no reason why you can't do a meal prep like it's discussed in this forum. Just pick some recipes and give it a go! If it's by plane, it's a lot harder--you need leak proof containers and it will likely be more hassle than it's worth. If you aren't going home, it'll make it much harder because the refrigerator in your hotel room likely has limited freezer space (unless you're in a residence inn or similar--and then just do standard meal prep).

Having traveled and stayed in hotels for years, I don't meal prep where I am. Even in a room with a kitchenette, it is VERY difficult cooking on the road as you don't have the cooking devices (stove, grill, etc.), the seasonings, or other items that you typically take for granted (plates, utensils, etc.). I found that per meal, I would end up spending significantly more because I would forget to bring something and would end up buying it, and then I'd have a whole suitcase of stuff that I picked up to bring home (ziplocks, seasonings, cooking utenzils, etc.).

You can travel and not meal prep, yet still eat inexpensively and reasonably healthy. Microwave frozen food has really improved in the last decade, in terms of appetizing and healthy (except for sodium) (it's inexpensive too). You can get steam fresh veggies or similar which are great for the bulk of a meal. At night, I use a rocketgrill or hotplate to cook meat or a prepared noodle dish. For lunches, I've used the frozen microwave dishes, or alternatively, ate a premix bag salad with meat that I've grilled on the rocket grill the night before.

If you think that 12 hour shifts are long, depending on your drive, you likely will still have plenty of time at night to cook for that night and the next day. I personally suggest eating both lunch and dinner at work (cook at work, then you don't have the smell; something like a rocketgrill works great in the coffee area at work), as late eating is known to cause digestion issues such as reflux. The last thing you want to do is eat 1500 calories then go to bed--that's a sure way to wake up in the middle of the night puking from reflux.
