Congrats on the sail and good video as usual. I've lost track of how many projects I've done and I still sew stuff to itself on occassion so you shouldn't worry about that. A couple of tips you may or may not find helpful - to help feed the slick dacron on that LSZ-1 I like to tighten the pressure foot WAY down. The half way point like where you were is great as a general setting and I actually back it off a bit from there when doing webbing. Second, I think the easiest way to do your tapes (luff or leech) is with a stapler. For luff tape you need a stapler intended for a hundred sheets or more, not for the strength but so the underside of the tool clears to cords in the luff tape so the staples set correctly. It's infinitely easier than basting tape and ultimately cheaper. Staplers (big or little) are also really nice on sunbrella projects where the basting tape doesn't hold as well as it should. I almost always resort to one when doing something like the small circle on the top of a winch cover. Welcome to the wonderful world of marine canvas, I look forward to future projects.

When we made receipt books at my old job we would use big staples and black paper tape to cover the staples. That would make an attractive book.

I don't remember the brand or style of tape, but gaffers tape might work.
