From what I remember, he recommends Vermont Smoked Pepperoni in his pizza recipes, and I've used it a bunch. Really tasty.

Buying pepperoni can be tricky. Normally we'll just grab whatever pack is at the grocery market. Luckily for me I have an Italian market near me and they make their own pepperoni. Its my go to choice as its better than the name brands like Hormel. But there are other options such as buying pepperoni from Amazon.

I usually just use hormel on my pizza at home but when I really want good pepperoni I order this, the natural casing helps get that cup and char around the edges so you get wonderful little grease pillows on top of your pizza.
