I've tried multiple recipes for tortilla wraps, and this held up the best. I make a batch every week or so and use it to make turkey wraps for lunch every day.
I didn't use my words well. Stores here have Bob's Red Mill that's blanched (http://www.bobsredmill.com/almond-meal-flour.html) and Bob's Red Mill that isn't (http://www.bobsredmill.com/shop/flours-and-meals/nut-and-seed-meals-flours/natural-almond-meal-flour.html). The blanched is definitely finer, but neither gives the same consistency as wheat flour.
I tried some of this (got from Amazon), and while it's a little finer than the blanched Bob's Red Mill, stuff still turns out grainy with it. In my experience, things like cookies, crackers, and cakes just won't turn out "right" with almond flour. However, it's great for sausage balls, meatloaf or meatballs, and garlic cheddar biscuits.
I'm using this Wellbee's brand and it's as fine as you're gonna get. I've also tried the Red Mill super fine one.
