I also have a speedy eater who is a resource guarder. All three of my dogs are trained to eat in their respective areas, and they do not move from it until released. This might be an option for you. Things got a little disruptive during our move to raw, because eating raw takes somewhat longer to accomplish than it did with kibble, so one of my dogs eats in my office on her mat, and I've started using baby gates. My speedy eater eats at the end of the hallway next to our doggy door. If you've got rooms, this should work. I think things might be a little more relaxed for your greedy eater if he could be assured that no one will enter his area while he eats. It seems to have worked for mine. I still supervise because all bowls must be picked up and areas cleaned once everyone's done eating. It doesn't take long. That also might reassure your greedy guy. Just don't hover too close.
I don't know what it is about pitties that they're saddled with sensitive skin. I have a staffie that had some epic skin conditions in the past, before I moved to raw, and would like to suggest an immune support supplement. An allergic reaction is nothing more than the body's immune system responding in an exaggerated way to some environmental stimulus, trying to fight of some perceived threat, which usually results in inflammation. While you wait for this new diet to show some improvement, which might be just around the corner, this might be an option to try.
You might be hard pressed to find something in pet stores for something quick (though you can get echinacea at Walmart now I think), but here's the one that has worked best for us (and I've used this on multiple dogs for varying skin problems in the past):
Zenapet - I used this alongside a Pau d' Arco supplement for warts in my youngest dog (twice) as well as my staffie, and the speed at which the warts disappeared was nothing short of miraculous. I keep a canister of Zenapet in my coldroom for just in case.
I've also used Platinum Performance's immune support with less success, but wanted to put it out there. Not all supplements work well with all dogs.

So I'd also like to suggest coconut oil, which can be used topically and in your dogs' diet. It's got anti-inflammatory properties and is also a mild immune system booster as well. Your pittie would probably love some warm oil treatment!
