The food/treat thing - he might still just be settling in. Try giving him the cheese or hotdogs or whatever in a non-training setting. When he's just chilling, drop some cut-up hot dogs by his face, for example. It might also just take more experimenting to find what he likes. Freeze-dried liver worked well for us, as did Zuke's Salmon treats. We also only fed him while training or using a puzzle toy, never out of a bowl. When we did eventually introduce a bowl, he preferred to eat out of his puzzle feeders or during training.
I'd be surprised if the other puppies in your puppy class are your puppy's age; most of the classes here won't accept them until they're 12 weeks old. Even so, if you've had him a week, I also imagine you've only been to one puppy class with him - things can and will change drastically between the first and last class. The worst puppy at our first puppy class was one of the best by the end.
10 week old puppies BARELY have any bladder control. They hardly have any say when they pee or poop. This is one of the reasons it's recommended to go out every hour - so you can catch the time they need to go.
It's really fucking hard to have a puppy. Puppy blues are a real thing and totally sound like what you're experiencing. And I wish I could tell you it'll get better soon, but the reality is most dogs don't really "grow up" until they're around a year - some people experience a big switch around 7-8 months, but either way, the next few months are going to be hard. The puppy blues themselves usually go away after a few weeks, but puppy ownership doesn't get easier in that they're still bitey and get into everything and need constant supervision, etc (although he should start sleeping longer, which will help). It's not for everyone and there's no shame in deciding that puppies aren't for you and returning the puppy (assuming you got him from a reputable breeder or rescue/shelter, who all should be able to help). But sticking it out will also have it's rewards...eventually. ha!
There's probably something in his past that causes him to react like that. I would try to avoid needing to wake him if possible.
In circumstances where you do need to wake him, bring an extra extra smelly treat with you (liver, salmon -- or something like this: Zuke's Salmon Treats). Stick the treat in front of his nose and I would bet he wakes up in a better mood.
