Great that you are testing your backups. After you restore them are you doing testing of the data? I.e. select, update, insert, delete?
What version of SS is in production? You could get the developer's version of SS. The dev version of SS will give you the enterprise version for dev only. $55 on amazon. Install it on a regular desktop computer. Restore the DBs there. You can pickup a few terabytes HDs for $100 or less.
But I am seeing some red flags...
Hundreds of DBs and no room to test a restore, anywhere? Not that you would want to test a restore on a production box regularly. How large are the DBs? How fast do they grow? Simple recovery? Sounds like you need to be careful you don't run out of room to do regular production transactions.
What RAID do you have for your SS data disks?
Are you keeping your backups on the prod server(s)?
Also, someone else mentioned this, why simple recovery in production? What bad things would happen if you lost a days worth of production data?
So they use tools costing over $10,000 to build something that could be built with faster, more elegant tools for free.
