I had the exact same issue with my 2010 Ford Escape XLT. I plugged that in ran the ABS bleed and bam problem fixed. Apparently doing proper bleeding isn't enough if air gets trapped in the ABS. I spent HOURS..Days.. researching this because my mechanic just couldn't fix my brakes even after putting two new master cylinders and doing five line bleeds.

Also there was some articles about people driving their Ford Escapes on dirt roads and slamming the brakes to engage their ABS. This led to the soft peddle going away.

Try to find someone with a reader that supports ABS or with access to techstream (preferred). Because you didn't keep the main reservoir full, you introduced air in the system. There are low cost readers that can do ABS. I'm sure if you look on Amazon, you can find some other low cost OBD2 readers. The upside is that you can diagnose any future problems with if you have any check engine codes. Your alternative is to take it to a shop which will do the same exact thing I suggested.
