You absolutely can. It's called drive cloning. For a laptop, you'll need to get a USB sata adapter, the new HD, and some disk cloning software. There are some commercial products such as Norton Ghost, and some free ones like Ghost4Linux.

Go to office depot, buy a USB to IDE/SATA converter.
Remove hard drive form laptop (normally not more then 3 screws and it should come right out.
Plug harddrive into adapter and then into computer. It will mount the drive.
Move your crap off of it.

You could also use a Hard Drive to USB adapter. One that I use covers SATA, IDE(ATA), and laptop IDE. Amazon sells them:
