Hey, sorry you're so frustrated. I have some issues controlling humidity in my house as well.

If you're worried about a faulty humidistat, perhaps you can download a copy of the user manual for whatever units you're considering purchasing to see if they have instructions for replacing that part, then pricing it out on a parts website. That way you know what you're getting into and how to fix it before it happens. It may give you some peace of mind.

Whenever I run the shower or bath, I just hit the switch for 30 minutes or an hour and don't have to think about it again. I like the control it gives me versus relying on the sensor. One other thing the timer switch is helpful for is considering what the makeup air is like. When you're exhausting the air from the home via the fans, makeup air will be pulled in from outside through cracks in the home's insulation. If the air outside is hot and/or humid, you're just replacing the humid air inside with more humid air, so the humidistat could keep things running indefinitely without actually helping the problem. It'd be best to get a dehumidifier or run the AC in those cases.
