This might not be what you're looking for, but I've shifted away from knife rolls all together and got myself a small metal toolbox.
Compact. Takes up about a foot and half. You can tuck it under your station during service or prep.
Convenient. If you need something, there's no need to roll out your kit and take up your entire station and half of the station of the cook next to you. Simply pull it out, pop the lock, grab what you need and move on. Not only is it faster, you're also not pissing off the fish guy cause you forgot to grab your peeler.
Protection. Well, it's metal. That should speak for itself when it comes to keeping your tools safe.
Lastly, Essentials. Working with a toolbox, rather than a roll honestly taught me how to minimize what I bring to work. Gone are the days of bringing that giant culinary school slicer that you've used a total of 10 times in your career. I have it down to MY bare essentials, your's may vary: main knife (gyuto), pairing/utility (gyuto jr.), ceramic honer (cause I'm fancy), fish spat, peeler, garnishing tweezers (cause I'm fancy), multitool, lighter, and the almighty Gray Kunz spoon.
