Induction Interface Disc works OK for low and medium settings, but not as well for a high temperature sear.

No difference in function - they all operate the same. If you already have an aluminium moka pot then I think it might make more sense to get an interface disk that could be used with any non ferromagnetic cookware instead of a new moka. This one got good reviews from Cook's Illustrated a few years ago:

Use this to cook with non-induction cookware on an induction surface.

Get an induction disk and you can use any cookware on your induction cooktop.
You could get a induction interface disk like this to use on your moka pot and any non induction ready cookware, then get a flat bottomed coffee siphon. That one comes with a cloth filter, but I think you can replace it if you want.
Amazon sells an "Induction Interface Disk" which does just that.
