I'm not sure what you mean here, mochas are usually made with espresso. If you mean she likes the chocolate and sweeter flavor, then most of the methods you'll hear about here may not appeal to her initially.

But, I learned to love just plain coffee by gradually ordering drinks that were more similar to it. I went Mochas > Vanilla Lattes > Lattes > Cappuccino > Coffee w/some cream and sugar > Black Coffee. I know it seems easier to just jump into black coffee from the beginning, and it's probably faster that way, but I find easing people into it makes it easier for them.

My recommendation though is a Clever Coffee Dripper. It operates almost exactly like a french press, but instead of plunging, you just drop it onto your mug and the coffee flows out. Here's a nice video demo It's really easy to use, and ridiculously easy to clean.

The aeropress people are recommending is also a great, and easy option.

I would advise though against a Chemex just because it takes a lot of time at first to start getting good cups consistently, and requires the investment of a scale + gooseneck, and if your wife has no desire to use a french press, there is no way she's going to do this in the morning. But if you're willing to take the time and spend the extra money (still would be a bit cheaper than a keurig!), then absolutely go for it.

With a drip, it's hard to make two vastly different cups without making two separate brews (and even then it might not make a huge difference). But yes, you can just make one pot, and let her do whatever she wants with her own cup. There are 46.5g of sugar in a 12oz can of mt dew. Which is a lot. So good for her for wanting to cut that out. (But just let her know her current replacement is worse) One tablespoon of sugar is ~12 grams. So as long as she's not dumping sugar in like crazy, just plain sugar and milk shouldn't be bad. If she doesn't like that, then this might work. But that's filled with chemicals and other less than savory items so if she uses it don't let her for too long.

TL;DR: Buy a clever. Use it to make your wife awesome coffee so she stops drinking sugar.
