I ususally augment the Neiman Marcus $250 cookie recipe slightly:

1 cup butter

1 cup dark brown sugar, packed

1 cup granulated sugar

2 eggs

1 teaspoon vanilla

2 ½ cups oatmeal

2 cups flour

½ teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

4 ounces semisweet chocolate chips

8 ounces Delightfulls Filled Baking Morsels w/ Peanut Butter (they're much less expensive at my local grocery store, but not everywhere carries them)

Use a food processor on the oatmeal to get it to a flour-like consistency.

Mix the rest together as normal, butter + sugars, then eggs, vanilla. Mix flour, salt, baking powder and soda. Stir the dry into the wet. Add chips, add oatmeal.

Cook at 375 for... I don't have an exact time. Halfway through I usually swap the top and bottom racks and rotate the trays though. The cookies harden a ton after a few hours. If you're not eating them immediately, take them out after 12ish minutes, when they are still a bit mushy. They'll harden into perfect chewy deliciousness. If you like them crunchy, leave them in an extra 5ish minutes until they start to brown.

The blended oatmeal makes for a great chewy consistency. The best part is those peanut butter filled chips though. You can play with the ratio of those to normal chips. I do about 2/3 PB filled because you still get some chocolate with them. I've been through dozens of recipes and these take the cake hands down. Everyone LOVES them.
