Does it have to be an "unmanaged" switch or would This suffice? Also does the switch get plugged in first to the router (in modem mode) and then plug in the new access point to the switch?

Yeah. The switch in question is this one - perhaps it is the issue? It worked fine before when connected to my router.

How easy is it to setup? Just connect this device to the router via Ethernet, then connect the ethernet cables from the SteamLink and the PC to this device?

Any settings to change/setup or is it as simple as that?
