I don't usually recommend single-purpose tools, but sometimes it really is helpful, especially if you're trying to make large quantities.
A ball-maker gizmo really does a great job for falafel. you can get enough compression force on the balls so they hold together well, and they all come out the exact same size so the whole batch will cook evenly.
