I tend to make a lot of quick and easy microwave dishes:

  • Eggs made with this. Takes 2 minutes @ 80% power for 4 eggs (be sure to break the yolks). They slide right out.
  • Omelets
  • Frozen chicken wings (Foster Farm Hot & Spicy)
  • Frozen meatballs (Farm Rich Original). Great topped with Rao's Marinara and a shredded Italian blend cheese.
  • Spanish "rice"
  • Protein powder bread

    Soups:

  • Simple chili recipe using leftover meats.
  • Egg drop soup (onions, garlic, spices, chicken broth, drizzle in beaten eggs)
  • Veggie/meat/cheese "dump" soup

    Non-microwave:

  • Sheet pan chicken. Any low carb veggies can go underneath. Save the runoff for soups. I do some version of this whenever I get 5 or 6 pounds of chicken pieces that were on sale.

    When I crave something sweet:

  • Breyer's Carb Smart Chocolate Ice Cream
  • Halo Top or Enlightened Ice Cream
  • Protein Powder mini-cakes
  • Jell-o Black Cherry Sugar Free Cups
  • Root Beer Float (diet A&W root beer and whipped cream or HWC)

Even easier yet: a microwave egg poacher. Crack a couple eggs, stab them with a fork, microwave for 1 minute, add whatever toppings you want, and you're good to go. I use this thing all the time, and it really is amazing.

I wouldn't recommend having more than one meal repeat every day, since you can be missing lots of necessary nutrients. Try different types of fruit instead of just bananas. Apples, oranges, kiwis, strawberries, plums and all that just to keep it fresh.

Eggs are also super easy to make every now and then, especially with a microwavable poacher. Pop in the toast, microwave the eggs, and then you have delicious eggs on toast.
