The way I do it is stick the probe of my Maverick in one, then use cheaper single probe thermometers in the rest. As they get done they go in the cooler to rest. It seems there is no predicting what hunk of meat will be done first so I like to keep an eye on all of them. I use a Taylor thermometer that you can get in any Walmart for about $10. I probably have 6 and all have been accurate and none have failed. Instant read thermometers are great but opening the smoker door too much to use them can cause havock with temps. I number my leave in thermometers with a sharpie so I know where the probes go and keep that door shut.
