HDMI splitters (or distribution amplifiers) will not support multiple different images. You will always just get the same thing on each output.
You also don't need 7 graphics cards. The NVS810 mentioned below has 8 outputs.
Another option is DisplayPort Hubs. Displayport will allow for multiple outputs over one connection using MST. For example you can do four 1080p60 HDMI outputs with this: https://www.amazon.com/dp/B01HIOY8VW
It's best if they are the same, but unlike with SLI, it's not a requirement. Usually I would recommend sticking with at least the same GPU vendor (NVIDIA) and if possible the same series (900).
It should be noted that the GTX 980 would support option #2 just fine, which would be simpler than adding a second GPU (particularly if your monitors support MST daisy-chaining, but an MST hub like this one would work if you have four HDMI 1080p monitors that you want to hook up).
(edit - I should also point out that MST hubs don't exactly go obsolete like GPUs do -- if you grab another GeForce GTX 980 for example, in a couple of years you're going to be getting rid of it one way or another, whereas with an MST hub, the only reason you'd replace it is because you want to get a higher-end model (the new DP 1.4 based models support twice the bandwidth (and therefore twice the total resolution/refresh rate) that the older DP 1.2 based models do), so it's a better investment if you're sticking with 5+ monitors long-term.
