Not very cheap but this should do the trick.

As far as the old consoles with the coax adapter, they normally sell some newer adapters that will have two RCA--one for video and one for mono audio.

You can do it pretty easily. In this link I am running an N64 through an HD projector and it works great. Do you have a receiver running to the projector?

I actually have the N64 hooked up to this:

Which goes into receiver from HDMI out and HDMI out goes from receiver to projector.
