We had some obnoxious musical toys of the v-tech variety that we’d gotten as gifts but squirreled away because we didn’t want to lose our minds. These are PERFECT for road trips! Kept them busy for a lot longer than a screen would have at that age because they were actively exploring.

Something like this will a million buttons and songs: VTech Sort and Discover Activity Cube, Red https://www.amazon.com/dp/B07FKLBYQV/ref=cm_sw_r_cp_api_i_j1WYDb5C2RK7C

For us, the best timeline was to get a fresh start in the morning and keep them busy while the road trip was still semi exciting and new. Stop for lunch, and then hopefully they’d conk out for a couple hours. By the time they woke up we’d be close to our destination.

Last piece of advice- give them all the snacks, including some less healthy treats they wouldn’t get otherwise. I still remember being allowed to eat ALL THE CHIPS on road trips as a kid. :)
