I personally love to load up on legumes.

Mix some broccoli, carrots, onion and peppers with some firm tofu and vegetable broth and bake in the oven.

Another favorite is to make a chickpea salad(mashed up) with celery red peppers, pickles and onions and tahini and a smidge of pickle juice, campers mix and garlic pepper. Add some avocado and voila.

Have you tried lentil pasta? Im not sure if thats kosher for you but it has a fuckton of iron, and I top with pasta sauce and peas.

A burrito bowl without rice, that has avocado, black beans, tofu, onions, and some sweet potatoes.

Similarly a sweet potato hash with spinach, sweet potatoes, peppers onions, and black beans with spices.

I like them all, but I'm not picky about taste. My favorite is the black bean pasta. I also really like lentil pastas.

Damn that sounds awesome. If you haven't tried this barilla plus stuff you definitely should. Its just like normal pasta but way healthier and like a dollar more. I eat a lot of pasta so I try to get the healthier stuff. There's really such a small difference in taste.

But today I made spaghetti with just pesto and breaded chicken for lunch between classes today and then for dinner I just made spaghetti and then while that was boiling I cooked some chicken then made kind of a sauce butter garlic lemon and pepper in the pan that the chicken cooked in and then mixed it with the spaghetti and added some parsley. Sometimes when I have parmigianno I'll do cream sauces or carbonara. Or if I have extra tomatoes I make meat sauce.
