Take a look at my Youtube videos. Everything from "Exploring Madeira" and newer is when I bought my GoPro. I borrowed a friends GoPro for a few of the previous videos but it was an older model and I didn't have any accessories, so wasn't as useful. But I bought mine mainly for canoe tripping and I did a ton of research into everything.
GoPro - first you need to decide which GoPro you want. When I bought mine, Hero 7 was the latest model (they now have Hero 8). If you're buying it for canoe tripping, don't even consider the white or silver models, they don't have replaceable batteries, so every time a battery dies you would need to start charging the actual device. No bueno. Now that the Hero 8 is out you could probably find a good deal on the Hero 7. Supposedly they've improved the stabilization even more, but take a look at my videos and you'll see even the Hero 7 Black stabilization is pretty epic.
Batteries - find them on sale. There was a huge deal the other week on Amazon for the double charger with an extra battery, maybe it will be back on sale for Black Friday. But depending on the trip length and what you're using the GoPro for, you should aim to have about 1 battery life per day. If you use it for timelapse etc. you'll obviously go through battery quicker than just the short 1-2min clips. You can also use power banks to recharge the GoPro. I like to have spare batteries for quick changing during the day, then overnight I'll use a power bank to recharge. Right now I have 4 batteries total, and if I'm going out for more than 3-4 days I'll supplement with power banks as well.
Accessories - these screen protectors are cheap and add a little peace of mind that you won't scratch the lens or screen on the back. This accessory pack was an epic purchase... yes it's all cheaply made, but nothing has broke on me yet and it's just such great value. The chest mount is great for POV shots (better than the head mount IMO), the bicycle handle mount is perfect for canoe handles (see the parts of my vid where I flip up the canoe) and the suction mount is great for dash cam type shots. This tripod selfie stick was probably the best accessory purchase though. Can use it with a smartphone or swap the head out and use it with your GoPro. The tripod feet extend for extra stability/support, and it's extremely lightweight and compact... perfect for canoe tripping. I take off the bluetooth remote button so there's no electronic aspect so I can use it underwater.
Other tips - use rocks or a sweatshirt or something around the base of the tripod for extra support and to keep it weighed down. Very important if you're using it fully extended and/or in windy weather. The GoPro can lose a lot of battery life overnight depending on the temperature/climate, so you might consider taking the battery out overnight. Download the GoPro app so you can control the camera through your phone... set up the tripod, frame your shot, and you can start/stop the GoPro remotely. Buy the proper memory card that they recommend from the approved list. Get the biggest memory you can. Once you start recording in 4k you'll see how much data it actually requires.
Probably a lot more I can ramble about but that should be a good start. GoPro Hero 7 Black, extra batteries, power banks, screen protector, accessory bundle kit, and that specific tripod/selfie... should be perfect.
edit: One thing to add, I also bring my iPhone with me. I use the iPhone for pictures and music mostly, but if the GoPro is set up on a timelapse or something it's nice to have a second recording device as well.
Hero 7 black is the way to go. The hypersmooth stabilization makes it worth it.
Accessories to get:
First of all, get a gopro plus trial. It gives you 50% off of batteries and other accessories, but not chargers or microsd cards.
Grab a few extra batteries. With the trial, they're $10 each.
The dual bay charger is well worth the price.
These are the microsd cards I use in my H7B. They're fast, reliable and cheap. Also on gopro's recommended list of cards to use.
I use tempered glass protectors for the lens and rear screen and they don't affect video quality at all. They went on very easily and the lens cap is a nice bonus.
For a case, I currently use this one, but the official case looks good too.
I use this frame mount and love it. The front round piece can be removed if desired; I took it off as I don't need it for what I use my gopro for. It includes mounting options for both standard threaded mounts and gopro mounts. And the back slides on and off.
If you need a head mount, the amazonbasics one is identical to the official gopro branded mount aside from the logo (I have both).
Completely optional, but I really like these aluminum knobs over the standard plastic ones.

u/dmmccullum - I'm weighing in late here, but here's another vote for the G2 with the PCC4K as your B-cam. They are the only cameras on your list with 10-bit and RAW internal.
Internal RAW is much more convenient than an external recorder (FS5) - and the C200 doesn't have 10-bit.

This setup will cost you a little over $10,800 and give you a RAW-capable A Cam with 15 stops of dynamic range and images that look like this:
In my view, this is the best two camera setup you can buy in this price range and the sub-$11,000 price tag leaves you enough for a nice set of cine primes (e.g., this PL mount SLR Magic APO-HyperPrime 25mm, 50mm and 85mm set, which comes with a PL to EF adapter for $7090).
This was shot with URSA Mini Pro and SLR Magic APO lenses.
All of that said, one downside to these cameras for your use case might be that FCPX doesn't read BRAW (and is unlikely to). The easiest thing to do would be to switch to Resolve (which comes free with the cameras).

i have a flip video mino hd. i received it as a gift along with the "action mount." the camcorder doesn't handle image stabilization very well and wouldn't recommend it for 1st person fast action sports. it's great for static or handheld video though. the "action mount" is utterly shit. if you find one you could probably modify it to hold it better but that still wouldn't protect the camcorder from elements such as water, mud, dirt, dust and the inevitable crash, since it doesn't have a protective housing.
i'm currently using a gopro and couldn't be happier with the results straight out of the camera.
i don't see a huge difference with a contour and a gopro; spec differences are minor. a bunch of pro riders use the contour and it produces really nice video (not sure if pre or post production though). the price is definitely more attractive as well.
if you go with a gopro, my favorite mounts are chest harness and seatpost / handlebar mount. search for youtube videos with them. the chest harness gives a great perspective where you feel like you're sitting right in the saddle. comfort-wise it could be something to get used to as it can feel a bit awkward with something strapped to the front of ya like a bra or if you're a guy, a bro.

That lets me wear a strap that makes me feel cooler than when I wear the dorky Neoprene ones that Op Tech sells. I've been using these add-on straps for a few years now to keep my camera handy for quick shots but keep the weight on my pack's suspension, and everything else I just keep tucked away in my pack where I can get to it if I need it. They'd also be easily transferable to a kid carrier for when you need that. The clips make it easy to swap over to a regular strap if I'm ditching my pack for a while, too.

Best, cheapest solution if you are already wearing a backpack. Camera rides on chest, but no strain on neck. Keep it from bumping up and down by clipping sternum strap over lens barrel when it's hanging. Easy. Hiked many miles in this configuration.

If you haven’t used the waterproof case in a while, check the seals. Try submerging the closed empty case in a tub to make sure there aren’t any leaks. The latex (?)/rubber(?) o-rings on the door do go bad,
Since you’ll be in water, the remote will not work. You’ll be manually turning it on and off.
Take extra batteries with you to swap out on the boat.
Be sure you have floaties on your camera/selfie sticks. Nothing worse than losing your camera into the abyss.
Oh, be sure to buy the desiccant to go inside the case. Camera gets warm in the case and the humid air will condense inside the case

I also use their neck strap, and leaving the loops on my camera/arca-swiss plate makes it easy to switch between the strap and the backpack.
Don't buy memory cards unless you know whether she's picky about the brand/size/speed. Also, it's not much of a gift, it spells loudly "I had 5 minutes to get you a gift and grabbed first thing I saw so you better enjoy".

There are a few microphones that should work, such as this one. Thing is, the AIS was always a bit spotty when it came to compatability between accessories and devices even with official Sony accessories.
Sony also made a microphone input adapter for it at some point but I'm having a hard time finding any links to it. Looks like a little barrel with a pink jack plug.
It is a dynamically balanced steady-cam based off of this design. Still working on the balanced part as seen by the fishing weight wedged between the platform and the rail.
It is staying up because of the counterweight. The universal joint is used to separate different axises of motion. There is a ball bearing in the flashlight/handle which separates the rotational axis from the universal joint.
Here is an unflattering picture showing the handle at 135 degrees while the platform is still horizontal.

From my experiences:
Use a tripod
Stop down, f/5-f/8 gives you good sharpness and DoF without losing too much. If you shoot wider, use a tripod.
Manual audio is king, or off camera if you can afford a mic (my video is all on camera audio).
I use this small LED video light that is very affordable and I mount it to the hot shoe with this
Other than that, practice practice practice. Use tape to set focal points if you need to change focus quickly and accurately. (Tape the focal points and then just match your hand to the tape when changing it).

Steadicams are entirely different; a lot of the steadiness comes from a giant counterweight, and the skill of the operator. I meant that we could do literally what's in the gif.
